Sugar Peas or mange-tout peas are normally eaten whole. No shelling to get at the small (very small) peas inside the pods. Just cook the whole pea. they are normally sweet to taste and can be cooked to tender.
Some varieties have flat pods as in the photo, whilst other such as ‘Sugar Snap’, are round-podded.
You can also allow the sugar peas - mange-tout peas- to mature as with ordinary peas and simply extract the peas from the pods. they have a great flavour, and have the added benefit that if not all are harvested at the earlier time, then those that are left can be allowed to develop further into 'normal' peas.
